Exactly what is needed; A Fab Hot Dogs for hamburgers

Howdy!

Over on the left coast, Jonathan Gold writes about a restaurant in Los Angeles where you can get a variety of regional dogs. Or as he writes: "a Carolina slaw dog and a North Jersey Italian hot dog, a Bald Eagle and a Midwestern-style Coney dog." Personally my favorite line is "the frankfurter diaspora."

It occurred to me, especially after seeing the film Hamburger America, that doing something like for the hamburger would be wonderful. Instead of having to travel all over the place (whether it was the country or Montreal is irrelevant) all you would need to do is park yourself in one seat and eat to your heart's content! Guber Burgers, Butter Burgers, Deep Fried Burgers, along with everything that didn't make the cut in the film all in one place - Awesome!

In today's episode Chris 'Zeke' Hand and Ryk 'E Coli' Edelstein drive to what seems the end of the earth, but is in fact Vaudreuil, so that they can visit and eat at the very first Five Guys restaurant in Quebec. Why Five Guys? Why Vaudreuil?

But before we get into the complete Five Guys experience, and answer questions like those, we need to back up slightly - actually a lot. Five Guys, in Quebec (and eastern Ontario) is run by Wayne Sellers and Caleb Koeppel. They met playing hockey, but not where you think. And then an introduction to Ryk 'E Coli' Edelstein is de rigueur. (If you are interested; e coli is a gram negative rod-shaped bacterium that is commonly found in the lower intestine of warm-blooded organisms. Most E. coli strains are harmless, they are part of the normal flora of the gut, and can benefit their hosts by producing vitamin K2, and by preventing the establishment of pathogenic bacteria within the intestine.)

IGA has some serious marketing talent

Howdy!

In the summer issue of Inspired (the in-house advertisement dressed up like a magazine for IGA) they had a hamburger on the cover,


so I, naturally, had to pick it up. Nothing special inside, just a whole bunch of advertisements and a whack of recipes using things you can only buy at IGA. But what jumped out at me was the phrase butcher-style technique. They use it to describe some of their new hamburger products. But what I want to know is what exactly does it mean?

Freer interprovincial trade in meat?

It appears that more and more barriers are coming down. According to Meat Trade News Daily (yes, I read 'em all) one of the results of all the Agriculture Ministers' meeting in Saskatoon was a pledge toward creating pilot projects toward freer interprovincial trade in meat. Basically getting something figured out so that provincially inspected abattoirs can sell their meat interprovincially.

On first blush, I'm not so certain I like this idea...

Teatro Hamburger making

Howdy!

Got a nice video here from the Teatro Restaurant in Calgary about making burgers. Personally, I like the use of a knife (and not a grinder) to chop the meat. But I think he handles it just a little bit too much.

L'Epicerie on Ketchup, Mustard & Relish

Looks like I can get a couple of videos out of the way all at once. Back in June L'épicerie did a 5 minute segment on condiments (thankfully at the beginning of the show). Tout.tv doesn't do embedding, so click here if you'd like to watch.

Or I can summarize: Three cooks, Michel Daviau from Frites Alors, Simon Frechette from Les Belles Sœurs and Peirre-Luc Chevalier from La Cantine sit around on a deck. They dip french fries into ketchup, hot dog bits into mustard, and eat relish using a spoon. They make inane comments ("mmmm," "this is good," "I don't like this one," etc) while tasting. And then somehow they decide which ones are best.

Given that Frites Alors uses pre-peeled potatoes, I'm inclined to discount anything and everything M. Daviau says. And as they are only tasting industrial food, I also question why anyone would want to eat it. But according to them (but I don't know how they chose) Selection, President's Choice and Heinz Organic are the best ketchups, Heinz has the best mustard, and No Name is the best relish.

Yeah, right...

Ricardo tries to do Burgers

And being the big star that he is, he tries to do something new. Namely using ground chicken to make his burgers and using the ground beef to make more kebab-like food. It doesn't work for me, although my main, major and big complaint is that he handles his food too much.

Some Great Burger Pictures

While it hasn't quite been as relaxing as I had hoped, the break has proved to be interesting to say the least. There have been (and will continue to be) changes here, there, and elsewhere, most notably; I'm going to try to publish three new posts on or about hamburgers and cheeseburgers in Montreal before 9AM every day that there isn't an episode podcast. And then, depending on how things go, I might start changing the nature of the podcasts, somewhat. But more on that development if and when it happens.
