(or play it here)

Good day and welcome to episode 88 of the Montreal Burger Report where Anna & Spiro Papadatos discuss the details of how Restaurant Tous les Jours makes and serves such good hamburgers.

All that was left after a BlissBurger and a CharmBurger

In today's episode the lovely and talented Anna Papdatos explains where the names of the hamburgers at Restaurant Tous les Jours come from. She then lists the most popular items on the menu. Zeke then asks would they open another Restaurant Tous les Jours? Anna and Spiro try to explain the popularity of Restaurant Tous les Jours while Zeke attempts to flirt with Anna, but fails. In episode 86 of the Montreal Burger Report Anna had stated that the Grilled Chicken Salad was the newest item. But, in fact there is a newer item on the menu. Spiro uses a charcoal grill to cook the burgers at Restaurant Tous les Jours, and talks about how he cooks the hamburgers. Then they both explain how they learned and were trained to cook and serve.

The Bill

Anna compares Restaurant Tous les Jours to Cheers and Spiro states that the family restaurant is a dying breed. Anna likes having a place where you can get an egg sandwich. They serve extremely big portions and emphasize the reasonable prices, the quality, and the service. Their ground beef is never frozen, and ultimately they they just try to keep thing simple.

Why some people refer to it as Steerburger Tous Les Jours

Where will your heroes eat next? Will it be a good burger? And what sound effects will Zeke use? Find the answer to these and other questions next week in episode 89 of the Montreal Burger Report. Same Burger time, same burger channel.

Good day and welcome to episode 87 of the Montreal Burger Report where your heroes, Chris 'Zeke' Hand and Ryk 'E Coli' Edelstein discuss what makes the burger at Restaurant Tous les jours so good, and then interview Anna & Spiro Papadatos.

The view from the back of Restaurant Tous les Jours

Zeke and E Coli have a discussion about the food at Restaurant Tous les Jours. E Coli comes to the conclusion that their food if so god because they take pride in making, cooking it and serving it. Zeke points out that if a restaurant is forthcoming with information on where and what they serve, it is much more likely to be a good restaurant. They both agree that Restaurant Tous les Jours serves "good, honest food." E Coli likes the afterglow, and then ponders what could be done to make the hamburgers at Restaurant Tous les Jours even better. The conversation veers towards the spaghetti sauce and E Coli wonders if it contains cinnamon and nutmeg.

Almost the entire menu at Restaurant Tous les Jours

Zeke asks Anna Papadatos if he can come back at another time to interview her and her brother. She says "yes," and he does. In the interview Anna tells Zeke that Restaurant Tous les Jours opened in December of 1975, Zeke congratulates them on their 35th anniversary. Anna states that initially it was her father and two other partners, and now the second generation has started to work there, which is her, her sister Toula and her brother Spiro. She comments that it is a lot of hours to work, but that she enjoys it because she has very nice customers.

The view from outside Restaurant Tous les Jours

She started working there as a teenager and Spiro started when he was 12 years-old. Their father still oversees everything, even though the restaurant is no longer open every day. They buy their beef from Colfax, and grind it at the restaurant three times per week. Their hamburgers are made out of 100% chuck. Spiro guesses that they make about 100 hamburgers on average every day. The Primeburger is their best seller. And Anna points out how they won a competition on the CBC for the best hamburger in Montreal.

Somebody has got to wash all those dishes...

How does Spiro cook a hamburger? Why is Restaurant Tous les Jours so popular? And how much does the Primeburger weigh? Find the answer to these and other questions next week in episode 88 of the Montreal Burger Report. Same Burger time, same burger channel.

Good day and welcome to Episode 86 of the Montreal Burger Report where your heroes, Chris 'Zeke' Hand and Ryk 'E Coli' Edelstein finish eating their hamburgers at Restaurant Tous les Jours and leave.

The CharmBurger at Restaurant Tous les Jours

'E Coli' steals a chunk of Zeke's Charmburger. He thinks that there is salt, pepper and MSG in the burger. Zeke has difficulty finding the pickle in his CharmBurger. 'E Coli' reminds Zeke not to put his double cheeseburger (aka The CharmnBurger) down unless he doesn't plan to pick it back up. Zeke points out that the bun can't quite absorb all the juices from both patties and then on top of it, his burger falls apart. 'E Coli' thinks that Anna Papadatos is one of the best servers our heroes have ever had had Zeke agrees.

Eating a CharmBurger

Our heroes try to guess what the most recent addition to the menu was (and are spectacularly wrong). Zeke requests a fork while 'E Coli' goes to the bathroom, which he points out is extremely clean. Our heroes have a brief discussion about old brands of beer, and 'E Coli' points out that Restaurant Tous les Jours would be a great place to go for breakfast in the middle of the day.

What fell out of the bun

Zeke requests the bill, and points out how the decor reminds him, slightly, of Mr. Steer. Anna Papadatos returns with the bill and inquires if Restaurant Tous les Jours is getting a good review. 'E Coli' asks for details on the fat content of the beef and where it is ground. He then comments on how low the prices are, and Zeke asks about the newest item on the menu. 'E Coli' is amazed at how inexpensive the food is at Restaurant Tous les Jours. Our heroes pay up front, and then leave.

O'Keefe, celle qui se prend en douceur.

Linda Extra Pickles Besner explains the evolution of her burger consumption from McDonald's and Harvey's through her vegetarian phase to where it is currently, rare with cheese, bacon, lettuce, tomato, onions, ketchup, mustard, mayonnaise and relish. Zeke explains how his path has gone in the opposite direction towards a plainer more austere burger. Our hero and heroine briefly discuss the food issue of the New Yorker. And then Zeke tries to sound all authoritative by making up some nonsense about what the law is with regards to a hamburger being cooked in Montreal.

Montreal Burger Report Episode 47: Restaurant Philippe

This week Chris 'Zeke' Hand and Ed Hawco (also known as Blork) are joined by one of Montreal's best chefs Julie Rondeau at the Montreal Hamburger Institution, Restaurant Philippe.

[caption id="attachment_1072" align="aligncenter" width="500" caption="The Restaurant Philippe Double Cheeseburger. Notice the crust formed by the Maillard Reaction."]The Restaurant Philippe Double Cheeseburger. Notice the crust formed by the Maillard Reaction.[/caption]

Zeke starts out by pointing out what he would do if he had Resto Zeke. Blork and Julie talk about the smashburger technique which produces a Maillard reaction and how it relates to the cooking and eating of hamburgers in great depth. Everyone discusses the ethical concerns of accepting free food and Zeke makes the executive decision to avoid any and all potential conflicts of interest by paying for everything. The general consensus is that they make great burgers at Restaurant Philippe, and everyone is in agreement that they should return often and soon.

Zeke's Verdict

I gotta give major props to Jack Ruttan for suggesting Restaurant Philippe (aka Resto Phil, Pataterie Chez Philippe and Chez Phil as well) and then to John, his dad and his daughter for making kick-ass hamburgers and cheeseburgers. I could ramble on using a variety of multi-syllabic words to elucidate on the exquisite appearance and how terrificly toothsome their repasts are. But I won't, and just simply state that they make really good hamburgers and cheeseburgers at Restaurant Philippe.

Ed's Verdict

The burgers at Chez Philippe are not sophisticated, but they are almost magically delicious. Whereas many burger places try to wow you with exotic sounding ingredients, and a lot of corner casse-croutes have traded in their souls for convenience and low-rent ingredients, Chez Philippe knocks me out with its modest menu of burgers that carry more than 40 years of uncompromising experience. The folks there still do it Phil's way, and the difference comes through in the flavour. They're one of the few places around (maybe the only one) using the "smash" burger technique, and the result is a gorgeous caramelized sear on the meat that amps up the beefiness to a heavenly level. It ain't fancy, but damn, is it good!

This week Chris 'Zeke' Hand and Ed Hawco (also known as Blork) are quiet and don't say a word. The entire show is spent listening to John Hachez talk about Restaurant Philippe's history, methods, recipes and love.

Chris 'Zeke' Hand and Ed Hawco (also known as Blork) are preparing to leave Le Cheval Blanc so that they can eat some hamburgers at the Legendary Montreal Institution Restaurant Philippe. Julie Rondeau, one of the best chefs in town has joined them because she has been making changes to the menu at Le Cheval Blanc.

In today's episode, while thay are walking down the street Zeke explains what a smashburger is, Blork gets all misty eyed and poetic about how wonderful and great the hamburgers at Restaurant Philippe are. And our heroes recognize it will be a momentous occasion because the previous time they had visited they had brought the restaurant reviewer from the Montreal Gazette with them and it was good.
