This week the burger report goes bilingual! Your heroes finagle an interview with not only the chef Gilles Tolen but the executive chef and pretty much head honcho in charge of the whole shebang, Charles-Antoine Crête. Unfortunately your heroes (actually E Coli had nothing to do with it, it was all Zeke's fault) but he screwed up during the interview with Chef Tolen and ran out of battery power. Sorry Gilles, next time we will be certain to plug our machine in. Fortunately Charles-Antoine Crête graciously agreed to be interviewed as well so we got back the stuff that we thought was lost for all of eternity.

How long until the trend hits Quebec?

Howdy!

Since pretty much forever, The Meers Store in Oklahoma has been serving hamburgers made from cattle raised (and I presume butchered) on their own ranch. Now I hear of this place, called Farm Burger in Georgia that is doing the same thing.

Right now there are five new hamburger joints that have opened up, or are opening up in Montreal. And that number seems to only get larger as more time passes. So how long until some entrepreneur decides to combine ranch and restaurant here?

Personally, it can't happen soon enough.

Upscale Burgers in LA and Montreal

Over at the Zagat Blog they enumerated on some expensive burgers in Los Angeles and Las Vegas. Which got me thinking about not cheap burgers here in Montreal.
And I'm certain I missed a bunch as well.

Canada Steak Burger in San Diego; color me confused

Howdy!

Apparently in San Diego there is a restaurant called the Canada Steak Burger. And not surprisingly their burgers are very good.

I think the closest we'll get to something like that here is Brother's Restaurant in Vancouver, as San Diego was named after a Franciscan monk, and at Brother's Restaurant the waiters are all dressed as Franciscan monks.

Ricardo & Ethné de Vienne make some hamburgers

Howdy!

And go about bass ackwards. First, since I can't embed the video from Tou.tv, you gotta click here to see it (assuming you want to see it...).

Second, I've met Ethné and she is very nice person, so no one should think that this is personal.

But, ground beef for hamburgers should only be seasoned on the exterior before cooking. And ground beef for hamburgers should never be manipulated with your hands. (see #8: Don't futz with your meat)

Ricardo adds ginger, garlic and an egg (one quick clue that something is not quite right with the burgers when you add an egg) at 10:39 of the video, adds his salt at 12:21 and the spices at 12:35 and then manipulates the whole concoction for 99 seconds! (From 14:24 to 16:03).

I have no idea how the burgers they cooked tasted, but I presume that with the ginger, garlic, egg and spices that it wasn't too beefy, and I would also venture a guess that the texture was much closer to meatloaf than a hamburger. So I figure that they might want to rename the recipe Meatloaf berbéré/berbère d'Ethné de Vienne.

Personally, I'd suggest a more apt comparison would be the Burger Melt.

Apparently in Sweden there is the chain of restaurants called Max Hamburger Restaurants who have started to offset their carbon footprint by planting trees in Africa in order to make people feel better about eating their Swedish Hamburgers.

We should invite Max’s Director of Sustainability, Pär Larshans over here to visit Smart Burger (and while I'm at it, what is it about the colors Orange and Green and sustainability?)

Chelsea Cheeseburger on Etsy

Howdy!

Seeing as how there ain't much local hamburger news here, I'm expanding the concept of the Montreal Burger Report slightly and now will occasionally present Burger Art that I feel wouldn't be hurt by a little attention on your part.

It's a 4" x 6" acrylic painting. Small, actually tiny. If I had seen it live and knew slightly more about Ms. Giraffe's work, I'd consider calling it a study. But since I haven't and I don't, a painting it is. As Ms. Giraffe writes, she supplies "the world with big eyed girls & their dreamy friends."

I'll take her word for it that this is an early example of her work. In the fullscale version it looks a little rough around the edges. ie there are gaps, smudges and her lines aren't as precisely delineated as one might expect. But this adds to the naif-like charm of the painting (study).

I can't quite figure out if Chelsea Cheeseburger is using the french fries as ski poles, or if she is holding onto them for support since it doesn't quite look like she is the most balanced person in the entire world. And given her expression, I venture a guess that she was either looking down a black diamond trail, or contemplating precisely how difficult that next step she was planning on taking is going to be.

Given that when this painting was made, Ms. Giraffe states that she wasn't in the happiest of moods, I'd also venture a guess that Chelsea Cheeseburger could quite possibly be a reflection of Ms. Giraffe's state of mind at the time.

On sale for $20, which is better than a bargain. And I don't make a single red centy (or any other money of any other color for that matter) off the deal.

Gotta get down to Burlington

Howdy!

USA Today went out and listed 51 burger joints in the United States. One is close enough to contemplate visiting, The Farmhouse Tap & Grill in Burlington, VT. According to Suzanne Podhaizer, food editor, Seven Days, they offer grass-fed beef, artisan cheeses, house-made pickles, and runny sunny-side-up eggs as toppings and more than 100 craft beers for your drinking pleasure. Although the idea of exposed brick and copper lighting fixtures along with a patio and backyard beer garden in a former McDonald's makes me wonder some.

Over at the Victoria Burger Blog they are going wild over Burger Melts, which they call Fatty Melts for some reason or another. However they decided to add peanut butter into the mix.

Buried at the end of this press release was this sentence: "Canada’s red-meat industry, with more than $20 billion in sales, is the nation’s single-largest employer in the food industry." It made me go "hmmmm." I don't think I had ever heard the term "red-meat industry" before.
